Yorkshire Scones Recipe
Ingredients:
- 500g (4 cups) self-raising flour
- 100g (½ cup) butter, cubed and at room temperature
- 100g (½ cup) caster sugar
- 250ml (1 cup) milk
- 1 large egg, beaten
- 150g (1 cup) raisins or currants (optional)
- 1/2 tsp salt
Instructions:
- Preheat the oven to 220°C (425°F, gas mark 7). Prepare a baking tray for later use by lining it with parchment paper.
- You will need a large mixing bowl, sift the self-raising flour and salt together. Add the room-temperature cubed butter. With a delicate touch, use your fingertips to gently blend the butter into the flour until the mixture takes on a luxurious, crumbly texture. until the mixture has a coarse, breadcrumb-like texture.
- Stir in the caster sugar. If you want fruit scones, add the raisins or currants at this stage.
- In another small mixing bowl, whisk the egg and milk until well combined. Reserve a small amount for glazing the scones. Incorporate the remaining egg and milk mixture into the dry ingredients slowly, stirring until a luxurious, velvety dough forms. You may not need to use all of the liquid.
- Lay the dough on a floured surface and use a rolling pin to gently flatten and shape it until it reaches a thickness of 2.5 cm (1 inch).
- Using a round cutter (approximately 6cm/2.5 inch in diameter), cut out rounds from the dough and arrange the scones on the prepared baking tray. Gather any remaining dough to form additional scones.
- Brush the tops of the scones with the reserved beaten egg mixture.
- Bake in the preheated oven for 12-15 minutes, or until the scones are risen and golden brown.
- Remove from the oven and let them cool on a wire rack.
